Mabo Tofu

 

(Pork Tofu)

 

Ingredients

1 container Firm Aloha Tofu

½ pound ground pork  

5 tablespoons green onions (white portion of the stalk), finely chopped

2 teaspoons ginger, finely chopped

1 teaspoon garlic, finely chopped 

2 tablespoons vegetable oil

sesame oil as needed

Ingredients for Sauce

⅔ cup water

2 tablespoons red miso

2 tablespoons sugar

2 tablespoons potato starch

1 tablespoon soy sauce

1 tablespoon Japanese sake

1 tablespoon mirin

1 tablespoon tobanjan*

Cooking Directions

1.  Cut tofu into desired size pieces.  Combine all the ingredients for sauce and mix well. 

2.  Heat vegetable oil in a frying pan over medium heat, add finely chopped garlic, ginger and green onions and sauté until fragrant, then add ground pork and cook until brown.

3. After ground pork is thoroughly cooked, add the sauce (mixed in advance) and simmer 2-3 minutes.  Then add tofu and simmer another 2-3 minutes while gently mixing tofu pieces with the sauce.  In the end, add a little bit of sesame oil.

What’s Tobanjan?*

Tobanjan is a Chinese fermented seasoning primarily made of soy beans.  By adding tobanjan to sautéed or stir-fried dishes, the aroma and spiciness will be enhanced. 

Quick Tip

If you like it spicy, add thinly sliced dried red hot chili pepper and sauté with other ingredients.
